Falafel with Hummus and Fattoush

The start of Ramadan brings back memories of two glorious decades I lived in the Middle East!

Falafel - chickpeas, onions, garlic, parsley, cumin, paprika...blitzed into a coarse mix and fried into golden crispy delights.

My usual five-ingredient hummus: chickpeas, tahini, lemon juice, garlic, olive oil.

Fattoush - assorted greens, cucumber, tomatoes, radish...with fried pita triangles. Dressing: olive oil, lemon, pomegranate molasses. So fresh and tangy! So Levantine.

Served with freshly baked pita.
