Stuffed Karela

Karela (Bitter Gourd). Whenever I try to type Karela, my keyboard changes it to Kerala. Both are Gourd's Own Country. So all good.

Karela peeled, slit, innards scooped out. Innards and peel and potatoes made into a spicy filling.

Filling stuffed into karelas. Tied up with strings, so the filling doesn't spill out. Who wants to show their fillings in public?

Sautéed with onions, chillies, garlic...
