Paneer Jalfrezi, Naan, and Daal

In other news, daal makhani is bubbling away on the side. Of course, a slab of butter gets involved to put the ‘makhan’ in makhani.

Naan hai to jahaan hai.
Naans are simple to make: plain flour, yoghurt, sugar, salt, ghee, and baking soda. And anything you like for its topping: garlic, coriander, sesame seeds, nigella seeds...and, naturally, slatherings of butter. Charred edges, fluffy inside. Heaven.
If that was not enough naansense, here's another naan joke: this guy in America ran out of bread; he went to his Indian neighbour to ask if he had any bread. The neighbour said, 'sorry, I have naan'.

This meal’s best paired with a quick and refreshing onion ring and shredded cucumber salad.
